🥔 Rooster potatoes are a beloved Irish variety known for their versatility and rich flavor. Here’s what makes them stand out:

🌟 Key Characteristics

  • Skin: Dull red with shallow eyes, making them easy to peel
  • Flesh: Pale yellow, dry, and floury — ideal for many cooking methods
  • Shape: Oval to slightly round and uniform in size
  • Texture: Fluffy yet creamy, with a beautiful earthy taste

🌱 Origin & Breeding

  • Bred in Carlow, Ireland at the Teagasc Oak Park Research Centre by Harry Kehoe in the early 1990s
  • A cross between Pentland Ivory and a variety known as OP 2532/64

  • Good resistance to blackleg, powdery scab, and potato leafroll virus
  • Low resistance to potato cyst nematodes
  • Stores well for long periods without bruising or splitting
